Hello, is there a way to select all files in a folder and say "convert all of these" instead of selecting one by one by one and then having to convert them?

Yes, you can.
After click on the button [Select Files], go into the folders where you have all your excel files to convert, then press on keyboard [Ctrl] + [A].
[Ctrl] + [A] means "Select All Files".

Great! Thank you that worked.
I created a drive mapping, say U:\ and mapped to a Document Library in SharePoint that is SSL so it was \NETBIOS@SSL\SubSite\Subsite taking you to the Document Library.

I run Simple MS Excel Doc Conv. and on the Convert Selected File(s) to (Drop down) (for me, I wanted to go from XLS to XLSX, so I choose XLSX - Microsoft Excel 2007 - 2013)
Select a folder to save the converted files, button, pressed, I go to Browse for a Folder, I select, Computer, then my "U:\" drive.
I select the Select Files button.
A window opens, Open. I select all, Ctrl-A (selecting the files that I want).
I found the issue here!
To resolve the issue, I have to go to Computer, on the left pane of the Open window, Select the "U:\" drive and then I can do "Select All" or "Ctrl-A" and open them. Before, it was going to a Web Based View, instead of a Folder Based View.
I select the Open button once I have the "Folder View" for the items I want.
I see in the list, a GOOD DEAL of files! Great. I click on the Start Convert button and away I go!
